About This Product
Glucose is a six-carbon monosaccharide, formula C6H12O6, with CAS number 50-99-7. In food it is produced by hydrolysing corn or wheat starch with acid or enzymes until the polymer is broken down completely to single sugar units, and it is supplied as a monohydrate or anhydrous crystalline powder, or as a syrup. The crystalline product is usually sold as dextrose, which refers specifically to the naturally occurring D-glucose isomer.
Being a single small molecule rather than a disaccharide changes its behaviour in several useful ways. It is a reducing sugar, so it participates directly in the Maillard reaction with amino acids, giving faster and deeper browning and more roasted flavour development than sucrose at the same baking conditions. Because it is a smaller molecule, at equal weight it contributes more dissolved particles than sucrose, which depresses freezing point more strongly and gives ice cream a softer, more scoopable texture. Its sweetness is only around 70 to 75 percent that of sucrose, with a cooler mouthfeel, and it is fermented readily and directly by yeast.
It is used in bakery, confectionery, ice cream and frozen desserts, beverages, brewing and fermentation, and in pharmaceutical and nutritional products.
Bio Green Foods supplies dextrose monohydrate and anhydrous grades to specification on assay, dextrose equivalent, moisture, ash, pH, colour and heavy metals.
