    About This Product

    Distarch phosphate is tapioca starch cross-linked with sodium trimetaphosphate or phosphorus oxychloride, which bridges adjacent starch chains with a diester phosphate link. It carries the additive number E1412, INS 1412. It is cross-linked only; no stabilising group is added, and that single fact determines where it belongs and where it does not.

    A native starch granule swells as it cooks until it ruptures, at which point viscosity collapses. Cross-links act as internal tie-rods: the granule still swells, but the bridges stop it bursting. The practical result is that gelatinisation shifts to a higher temperature, peak viscosity is lower but is reached and then held rather than peaking and falling away, and the paste survives conditions that destroy native starch. Prolonged high shear in a colloid mill or homogeniser, an hour in a retort at 121 degrees, and low pH in a tomato or vinegar system are all tolerated in direct proportion to the degree of cross-linking.

    What it does not do is resist retrogradation. Cross-linking protects the granule; it does nothing to stop the amylose fraction re-associating on cooling and storage. A distarch phosphate will therefore firm, cloud and weep in a chilled or frozen product exactly as native starch does. Where a product is both retorted and refrigerated, or frozen at any point, the correct specification is a dual-modified grade such as acetylated distarch phosphate E1414 or hydroxypropyl distarch phosphate E1442, and E1412 will disappoint.

    So the honest position of E1412 is as the economical choice for ambient and hot-filled products that face mechanical and thermal punishment but no cold chain: canned soups and vegetables in brine, retorted meat and fish, acidic ambient sauces, bakery fillings that are baked and sold warm or ambient, and as a texture modifier where a short, heavy body is wanted.
