    Granulated tapioca starch is native tapioca starch that has been agglomerated into coarse, free-flowing granules rather than left as a fine powder. It is a physical change, not a chemical one: the starch itself is unmodified, but the particle has been built up so that it behaves completely differently when it meets a wet surface.

    The reason the trade buys it is crust architecture. A fine starch dusted onto wet chicken or prawn hydrates into a smooth skin and fries to a dense, even shell. A granule hydrates only at its surface, so each particle stays discrete and the coating goes into the fryer as a loose, irregular layer with air between the grains. What comes out is the open, craggy, shatteringly brittle crust associated with Taiwanese fried chicken and salt-and-pepper prawns, rather than the tight batter coat a powder gives.

    It also holds crispness longer. The open structure lets steam escape from the meat instead of condensing under a sealed shell, which is why a granulated coating survives the trip from fryer to counter where a fine-starch coating goes leathery. Because tapioca is bland and almost colourless, the crust browns from the Maillard reaction in the protein rather than from the starch itself, and seasoning is tasted cleanly.

    In practice it is applied dry to a marinated or lightly battered surface, pressed on, rested briefly to let the granules grip, and fried hot. Dusting is lower than with powder because granules do not become airborne, which matters in an open production kitchen. It is used for fried chicken, prawns and squid, for crisp-fried vegetables and tofu, as a dusting starch for mochi and rice confectionery where a non-sticky surface is wanted, and as a texture element in savoury snacks.
