    About This Product

    Acetylated distarch adipate is tapioca starch cross-linked with adipic anhydride and stabilised by acetylation. It carries the additive number E1422, INS 1422, with acetyl groups limited to 2.5 per cent and adipate groups to 0.135 per cent. Functionally it sits alongside acetylated distarch phosphate E1414, and the choice between them is a texture decision rather than a performance one.

    The difference is in the bridge. A phosphate cross-link is short and rigid; an adipate cross-link is a six-carbon diester, longer and with some conformational freedom. A granule tied with adipate therefore swells a little more before the bridges take the load, and the paste it gives is shorter and more particulate, with a creamy, pulpy mouthfeel rather than the heavy cohesive body of a phosphate-linked starch. In a dressing or a dairy dessert that reads as richness; in a clear sauce it reads as slight opacity, which is why E1414 is usually preferred there.

    Both modifications are present for the usual reasons. The adipate cross-links carry the granule through pasteurisation, homogenisation and the acid of a vinegar or citrus system, and the acetyl groups block retrogradation so the product does not cloud, firm or weep in the chiller or through a freeze-thaw cycle.

    That combination makes it the common specification for mayonnaise and emulsified dressings, where it provides body at low oil without the plasticity of a phosphate starch, for yoghurt and fermented dairy where the acid is constant and the texture target is creamy, for fruit preparations stirred into dairy, and for bakery cream and filling systems. It is also used in chilled meat products as a water-holding texturiser.

    One practical note: adipate is less widely approved than phosphate in some jurisdictions and some retailer specifications exclude it, so a product intended for broad export should have the additive checked against the destination list before formulation is locked.
