    About This Product

    Sodium gluconate is the sodium salt of gluconic acid, produced by fermenting glucose and supplied as a white crystalline powder that is very soluble in water and readily biodegradable. It carries CAS number 527-07-1 and the European additive number E576.

    Its distinguishing property is chelation at high pH. Most sequestrants lose their grip on metal ions as alkalinity rises, because hydroxide competes for the metal and precipitates it; sodium gluconate instead forms stable complexes with calcium, iron and aluminium in strong caustic solution.

    In a food plant that is exactly the condition inside a bottle washer or a caustic clean-in-place circuit, where hardness scale and iron would otherwise deposit on the ware and on the equipment surfaces. Adding sodium gluconate keeps those metals in solution so they drain away rather than filming the glass.

    It is also used as a sequestrant within foods themselves, where it stabilises against metal-catalysed oxidation, and it has a mildly salty taste that finds use in reduced-sodium formulations.
