Natural Cocoa Powder 10–12% Fat (Premium Grade)

    About This Product

This premium grade is natural cocoa powder: cocoa that has not been alkalised, with a fat content of 10–12%, a pH of 5.0 minimum and moisture of 5% maximum. It is a fine, free-flowing brown powder with a normal cocoa smell, limited to 12% total ash and 1.75% shell, with a fineness of 99.0–99.9%.

Because it keeps the natural acidity of cocoa, it reacts with sodium bicarbonate and is the usual choice for soda-raised cakes, brownies and chocolate biscuits. It is also used in cocoa drink blends, confectionery fillings and coatings, and dairy desserts where a sharper cocoa note is wanted.

The premium and standard natural grades are tested against the same limits; the reference lot of this grade returned 9.56% ash, 1.49% shell and an ash alkalinity of 3.57 as K₂O. Buyers should confirm the current specification, the sieve used for fineness, microbiological limits, packaging and suitability for their product, and obtain an analysis certificate covering the lot offered.
