About This Product
Dipotassium hydrogen phosphate, also called dipotassium phosphate or DKP, has the formula K2HPO4, CAS number 7758-11-4 and the European additive number E340(ii). It is supplied as white deliquescent granules or powder, very soluble in water, giving a mildly alkaline solution at around pH 9.
Its value is as a buffer. A buffer resists change in pH when acid is added, and DKP holds a system on the alkaline side of neutral. The clearest illustration is non-dairy creamer. Coffee is acidic, and when creamer meets it the local pH can fall to the isoelectric point of the creamer's protein, at which the protein loses its charge, stops repelling itself and flocculates into visible specks, the defect known as feathering. Including DKP in the creamer raises and buffers its pH so that mixing with coffee never reaches that point. The same buffering is used to stabilise proteins in dairy and to keep pH constant in fermentation, where it also supplies potassium and phosphorus as nutrients. It contributes potassium rather than sodium, which suits reduced-sodium formulation.
It is used in non-dairy creamers and whiteners, processed cheese, evaporated and powdered milk, isotonic and protein beverages, fermentation media and as a nutrient salt.
Bio Green Foods supplies food-grade DKP to specification on assay, pH, loss on drying, chlorides, fluoride, arsenic and heavy metals.
