磷酸氢二钾，又称二钾磷酸盐或DKP，分子式为K2HPO4，CAS号为7758-11-4，欧盟食品添加剂编号为E340(ii)。产品为白色潮解性颗粒或粉末，极易溶于水，水溶液呈弱碱性，pH约为9。
其价值在于缓冲作用。缓冲剂可在加入酸时抵抗pH变化，而DKP使体系保持在中性偏碱一侧。最典型的例子是植脂末。咖啡呈酸性，植脂末与之接触时，局部pH可能降至其蛋白质的等电点，此时蛋白质失去电荷，不再相互排斥，絮凝成肉眼可见的颗粒，即所谓的羽化（feathering）缺陷。在植脂末中加入DKP可提高并缓冲其pH，使其与咖啡混合时始终不会达到该点。同样的缓冲作用用于稳定乳制品中的蛋白质，并在发酵中保持pH恒定，同时提供钾和磷作为营养元素。它提供的是钾而非钠，适合低钠配方。
