甘油（glycerol，亦称 glycerine 或 glycerin）即丙烷-1,2,3-三醇，分子式为 C3H8O3，CAS 号为 56-81-5，欧洲添加剂编号为 E422。本精制等级为澄清、无色至微黄色的黏稠液体，标称纯度 99%，味甜，可与水完全混溶。
在食品中，甘油最有用的特性在于其结合水分的方式。极小的分子上带有三个羟基，使甘油成为一种高效保湿剂，可降低水分活度，使软蛋糕、谷物棒、馅料、糖霜和果干保持柔软，既不易变干，也能抑制微生物生长。其甜度约为蔗糖的 60%，不会结晶，并能溶解不溶于水的香料和色素，因此在许多风味提取物中用作载体。本规格中针对含氯化合物、脂肪酸及酯类以及易炭化物的纯度检测，均为药典级精制甘油的检测项目。用于食品时，买方还应要求检测二甘醇和乙二醇，并在素食、清真或犹太洁食属性至关重要时确认甘油的来源。
