六偏磷酸钠通常缩写为 SHMP，由磷酸一钠熔融后急速冷却制得，因此形成玻璃态无定形固体而非结晶体。其 CAS 号为 10124-56-8，欧盟食品添加剂编号为 E452(i)，以玻璃状片、颗粒或粉末形式供应，在水中溶解缓慢但完全。
其突出特性是螯合作用。长链磷酸根包裹钙、镁、铁等二价金属离子，将其保持在可溶性络合物中，使其无法沉淀、反应或催化氧化。在硬水体系中，这可防止结垢以及钙在饮料中造成的浑浊和沉淀。在肉类和水产品加工中，聚磷酸盐还会略微提高 pH 值并使肌肉蛋白舒展，提高其持水能力，从而降低蒸煮损失、保持产品多汁；对虾和扇贝还可减少解冻时的滴液损失。在乳制品中可稳定蛋白质、防止受热凝聚，在再制干酪中则作为乳化盐。它还可用作分散剂和质构改良剂。
