磷酸三钙分子式为 Ca3(PO4)2，CAS 号为 7758-87-4，欧洲食品添加剂编号为 E341(iii)。商品级产品通常为羟基磷灰石钙，而非严格化学计量的化合物。以细白色、无臭、无味粉末供应，几乎不溶于水，但可溶于稀酸。
其不溶性使其具有双重用途。作为强化剂，不溶性钙源不带来任何味道、无白垩感口感，也不干扰 pH 值或澄清度；由于可在胃酸中溶解，其生物利用度仍得以保持；同时它在提供钙的同时提供磷，而这正是骨骼矿化实际所需的组合。作为抗结剂，极细的不溶性颗粒包覆在食盐或糖粉等吸湿性晶体表面，将其物理隔开并吸收表面水分，使颗粒之间无法形成桥连，粉体保持良好流动性。其高比表面积正是其在此方面优于较粗物料的原因。它还用作口腔护理中的温和摩擦剂以及片剂辅料。
