其最显著的食品应用依赖于与钙的反应。在速溶布丁粉中，焦磷酸四钠与牛奶中天然存在的钙反应，形成网络结构，使混合物在室温下数分钟内凝固成凝胶，无需加热蒸煮，这正是免煮布丁得以实现的原因。在肉类、禽类和水产品中，同样的磷酸盐化学以不同方式发挥作用：它提高pH，使其偏离肌肉蛋白的等电点，并解离肌动球蛋白复合物，从而打开蛋白质结构，使其结合更多水分，减少汁液流失和蒸煮损失，并改善质构。它也是铁和铜的有效螯合剂，可保护油脂和色素免受金属催化的氧化，并用作分散剂和缓冲剂。
