磷酸氢钙的分子式为 CaHPO4，可供应无水盐或二水合物，CAS 号 7757-93-9，欧盟食品添加剂编号 E341(ii)。它是白色无臭粉末，几乎不溶于水，但易溶于稀酸。
其不溶性正是其功能所在，而非缺点。作为膨松酸，它在室温下与碳酸氢钠反应缓慢，因为任一时刻溶解的量都极少；一旦炉温升高，反应便急剧加快。因此它属于缓效或双重作用膨松酸，将大部分产气推迟到面糊进入烤炉之后，此时膨胀的气泡被固定在面包心中，而不会在调粉和静置过程中逸失。在营养强化方面，同样的不溶性意味着它在提供钙和磷的同时不带入异味、不改变 pH 值、不影响产品澄清度，并且所提供的两种矿物质比例接近人体的利用比例。它在粉体中还具有抗结块和助流作用。
