海藻糖是由两个葡萄糖单元头对头连接而成的非还原性双糖，分子式为 C12H22O11，CAS 号 99-20-7。它天然存在于蘑菇、酵母和蜂蜜中，也存在于能够耐受极端脱水的生物体内，工业上通过淀粉的酶法转化生产，以白色结晶粉末形式供应。
两个葡萄糖单元之间的头对头连接正是其特点所在。由于形成该键时两个还原端均被占用，海藻糖属于非还原糖：不参与美拉德反应，因此在加热或贮存过程中不会与蛋白质和氨基酸发生褐变或产生异味。同样的化学键还使其对酸和热具有异常的稳定性。其被利用得最多的性质是在冷冻和干燥过程中的保护作用——海藻糖分子取代蛋白质和膜周围的水分，维持其结构完整；在实际应用中，这意味着冷冻及冻干食品的汁液流失更少、质构更好，并可降低淀粉老化，从而延缓烘焙制品变硬。其甜度约为蔗糖的百分之四十五，口感纯净柔和，并可抑制苦味和异味。
