右旋糖是由水解淀粉（通常为玉米淀粉）结晶而得的 D-葡萄糖。市售有两种形态，二者不可互换：一水物含一分子结晶水，水分约 9%，而无水物基本不含水分，因而单位重量的含量相应更高。
这一差异在两方面具有意义。当配方水分必须受控时，例如巧克力或要求长保质期的干混料，应指定无水右旋糖，其更高的有效糖含量会改变配方平衡。一水物价格更低，在一般用途中占主导地位。
其最具特色的功能特性是溶解热为强负值：右旋糖溶解时吸热，在舌面上产生可察觉的清凉感。因此它被用于薄荷糖、口香糖和泡腾片中，这一效果可强化风味。
除甜味之外，右旋糖是面包酵母易于发酵的底物，可通过美拉德反应上色以形成面包皮色泽，并提供运动营养和临床营养中所用的快速吸收碳水化合物。
