山梨糖醇粉是结晶山梨糖醇，分子式 C6H14O6，CAS 号为 50-70-4，欧洲添加剂编号为 E420(i)。它以白色结晶粉末或颗粒形式供应，由氢化葡萄糖浆结晶制得，分为标准级和直接压片级。
结晶形式的用途与液体形式不同。山梨糖醇一经结晶，其羟基便固定在晶格中，而非可用于结合空气中的水分，因此粉末的吸湿性远低于糖浆，可作为干燥配料进行处理、混合和压片。直接压片级采用特定的颗粒结构设计，无需单独制粒即可在压力下黏结成型，因此成为咀嚼片和含片中的常用稀释剂。它提供填充体积、约为蔗糖 60% 的纯净甜味，以及因负溶解热而产生的明显清凉感，适用于薄荷类和药用产品，并可掩盖苦味。它不致龋，每克提供约 2.6 卡路里，血糖反应低。多元醇耐受量限制与液体级相同。
它用于咀嚼片和含片、无糖糖果与口香糖，作为与高倍甜味剂配合使用的填充型甜味剂，以及用于膳食食品。
