苯甲酸钾是苯甲酸的钾盐，分子式为 C7H5KO2，CAS 号为 582-25-2，欧盟食品添加剂编号为 E212。产品为白色颗粒状粉末，易溶于水，溶解度远高于苯甲酸本身，这也是在水基产品中优先使用其盐类而非游离酸的原因。
其防腐化学作用与苯甲酸钠完全相同，因为两者在溶液中均会解离，起作用的是苯甲酸根离子，确切地说是平衡状态下以未解离苯甲酸形式存在的那一小部分。该部分完全取决于 pH：苯甲酸的 pKa 约为 4.2，因此该防腐剂在 pH 4.0 以下活性很强，在 4.5 以上迅速减弱，在中性 pH 下基本无效。它主要作用于酵母和霉菌。选择钾盐的原因在于阳离子。在低钠饮料和食品中，它可提供相同的防护而不引入钠；在配方的钠含量因标签要求已达上限时同样有帮助。与所有苯甲酸盐一样需注意：在抗坏血酸、热和光同时存在的条件下，可能生成痕量苯。
