丙酸铵是丙酸的铵盐，分子式为C3H9NO2，CAS号为17496-08-1。产品以澄清水溶液形式供应，浓度通常约为50%，或吸附于固体载体上以便干法投料。与丙酸钙和丙酸钠不同，丙酸铵具有吸湿性和潮解性，因此通常以液体形式处理。
其防腐作用与所有丙酸盐相同：未解离的丙酸穿过霉菌和酵母的细胞膜，在细胞内较高的pH条件下解离，破坏细胞的能量代谢。因此，活性取决于基质的pH值，在酸性条件下效果最佳。铵盐与其他丙酸盐的区别在于阳离子。丙酸钙引入钙，丙酸钠引入钠，而铵盐两者都不引入；在反刍动物饲料中，铵离子本身还可作为非蛋白氮来源，由瘤胃微生物转化为蛋白质。此外，它对设备的腐蚀性低于游离丙酸。
丙酸铵用于高水分谷物、干草和全混合日粮的保存，用于配合饲料生产，并在允许使用铵盐形式的烘焙应用中用作防霉剂。
