亚硫酸钠，分子式 Na2SO3，CAS 号为 7757-83-7，欧洲添加剂编号为 E221。无水级为白色、流动性良好的粉末，可溶于水，其水溶液呈弱碱性。与其他亚硫酸盐处理剂一样，它通过在溶液中提供亚硫酸根和二氧化硫发挥作用。
它是常用亚硫酸盐处理剂中酸性最弱的一种，这正是选用它的依据。焦亚硫酸钠易于释放 SO2 并使 pH 值下降，适用于葡萄酒和果汁等酸性产品，但在中性或碱性体系中可能造成干扰。亚硫酸钠可提供相当的抗氧化和抗褐变保护，同时基本不改变 pH 值，因此用于酸化会损害产品的场合。其作用方式相同：还原氧气，抑制导致切分果蔬酶促褐变的多酚氧化酶，通过结合羰基阻断美拉德褐变，并抑制野生酵母和霉菌。过敏原要求与所有亚硫酸盐相同，以 SO2 计超过 10 mg/kg 时必须标示；此外，不得用于被视为维生素 B1 重要来源的食品，因为它会破坏维生素 B1。
