它与其他多元醇的区别在于不吸潮。其立体异构体山梨醇吸湿性强，正是因为能够保水才被使用；而甘露醇尽管分子式几乎相同，却因分子在晶体中的堆积方式而几乎不吸湿。这一单一特性决定了它的用途。它可撒于口香糖表面防止粘连，本身不会吸潮发黏，这是山梨醇无法胜任的。在压片中，同样的稳定性，加上纯净的口感以及负溶解热带来的清凉感，使其成为咀嚼片和口崩片的优选稀释剂。其甜度约为蔗糖的 60%，每克提供约 1.6 卡路里，且不致龋。与其他多元醇一样，摄入量较高时可能产生轻泻作用。
