L-苯丙氨酸是一种通过发酵生产的必需芳香族氨基酸。它是酪氨酸的前体，并经由酪氨酸生成儿茶酚胺类神经递质，这也是其在膳食补充剂中应用的依据。
其最大的工业用途是作为原料而非营养素：阿斯巴甜是 L-天冬氨酸与 L-苯丙氨酸所构成二肽的甲酯，因此苯丙氨酸的需求与阿斯巴甜产量密切相关。
一项法规要求决定了它在食品中的使用。苯丙酮尿症患者无法代谢苯丙氨酸，其蓄积有害，因此含有该成分或含有阿斯巴甜的食品必须标示其为苯丙氨酸来源。在配方设计之前，应针对目标市场确认这一标签义务。
光学纯度很重要：只有 L-对映体在营养上有用，含量与旋光度是需要确认的规格项目。
