L-赖氨酸是人体无法自行合成的九种氨基酸之一，工业上以棒状杆菌（Corynebacterium）菌株发酵碳水化合物制得。最常见的供应形式为 L-赖氨酸盐酸盐，CAS 657-27-2，其性质稳定、流动性好，比 CAS 56-87-1 的游离碱更易于处理。
其商业重要性源于一个营养学事实：赖氨酸是小麦、玉米和大米蛋白中的第一限制性氨基酸。以谷物为主的膳食中，赖氨酸会先于其他任何必需氨基酸出现不足，因此无论摄入多少，该膳食中的蛋白质都无法被充分利用。补充赖氨酸可提高整体蛋白质摄入的生物价。
因此，它在动物饲料中占据核心地位，可在不损失生产性能的前提下实现更低粗蛋白的配方；在以谷物为主食的地区，它也用于谷物制品的营养强化。此外还用于运动营养、临床营养和膳食补充剂。
