阿斯巴甜是二肽 L-天门冬氨酰-L-苯丙氨酸的甲酯，CAS 号为 22839-47-0，欧盟食品添加剂编号为 E951，以白色结晶粉末形式供应。尽管它由两种氨基酸构成并像蛋白质一样被消化，但其甜度约为蔗糖的 200 倍，因此使用量所带来的热量可以忽略不计。
其甜味特征接近蔗糖，甜感起始纯净，没有明显的苦味或金属味余味，因此成为低热量饮料中标杆性的高倍甜味剂。两项性质决定了它的使用方式。其一，它不耐热：肽键在烘烤或长时间加热时会水解，甜度逐渐损失，因此阿斯巴甜不适用于大多数烘焙食品。其二，它在酸性溶液中会随时间缓慢降解，这为碳酸饮料设定的是实际货架期，而非配方上限。它还与安赛蜜具有协同作用，两者复配所得的甜味比单独使用任一种都更接近蔗糖。由于消化时会释放苯丙氨酸，任何含有该成分的产品都必须为苯丙酮尿症人群作出标示。
