山梨糖醇是一种六碳糖醇，分子式 C6H14O6，CAS 号为 50-70-4，欧洲添加剂编号为 E420。液体级 E420(ii) 为澄清、无色、黏稠的 70% 水溶液，由葡萄糖加氢制得。它天然存在于核果类水果中。
液体形式主要用于水分管理而非提供甜味。山梨糖醇吸湿性强：其六个羟基与水形成氢键并将水保持住，因而使产品保持柔软可塑，并延缓本会缩短保质期的老化与干燥。这也是它用于牙膏（防止膏体在软管内硬化）和软质糖果的原因。溶液形式还可增塑并控制无糖糖果中的结晶。其甜度约为蔗糖的 60%，并具有明显的清凉感，每克提供约 2.6 卡路里，不被口腔细菌发酵，因此不致龋，且代谢在很大程度上不依赖胰岛素。与所有多元醇一样，它吸收不完全并在大肠中发酵，因此在欧盟，多元醇含量超过 10% 的产品必须标明过量食用可能产生轻泻作用。
