醋酸钾是乙酸的钾盐，分子式为 C2H3KO2，CAS 号为 127-08-2，欧盟食品添加剂编号为 E261。产品以白色、强潮解性结晶粉末或溶液形式供应，极易溶于水，水溶液呈弱碱性。
在食品中用作酸度调节剂和防腐剂。抗菌作用来自醋酸根离子，在酸性条件下效果最佳，此时部分以未解离的乙酸形式存在，可穿过微生物细胞膜；尤其用于即食肉制品中抑制李斯特菌，醋酸盐与双乙酸盐复配是行业常规做法。选用该盐而非醋酸钠的原因在于钾离子。以降钠为目标的配方调整会同时失去盐的防腐作用和风味贡献，而醋酸钾可在不引入钠的情况下恢复抗菌保护，并同时提供钾这一营养素。潮解性是其主要的操作限制：必须密封干燥贮存，否则会吸收空气中的水分而液化。
用于即食肉禽制品、各类低钠产品，作为酱汁、调味汁和罐头食品中的缓冲剂，以及宠物食品。
