    Guar gum is a natural galactomannan hydrocolloid obtained from the endosperm of guar beans. In food manufacturing it is valued because it hydrates in cold water, builds high viscosity at low dosage and works as a thickener, stabiliser, emulsifier support and water-binding ingredient. Food-grade guar gum is declared as guar gum or E412 in markets where that additive numbering applies.

    The ingredient is widely used where texture and shelf-life stability matter. In frozen desserts it helps reduce ice-crystal growth and improves body. In bakery it helps retain moisture and supports softer dough systems. In dairy and plant-based products it contributes viscosity and a more uniform texture. In sauces, salad dressings and gravies it binds water and reduces separation. It is also used in beverages for pulp suspension, in confectionery for viscosity control, and in noodles and prepared foods where hydration, mouthfeel and process tolerance are important.

    Grade selection depends on viscosity, particle size, hydration speed, microbial limits and the intended application. Coarser grades can be easier to disperse in factory mixing, while finer grades hydrate faster in instant systems when they are pre-blended correctly. Guar gum is often combined with xanthan gum to increase viscosity more efficiently than either gum alone, and with starches or proteins where the recipe needs a specific mouthfeel or freeze-thaw behaviour.
