柠檬酸为三元有机酸，分子式 C6H8O7，CAS 号 77-92-9，欧盟食品添加剂编号 E330。它天然存在于柑橘类水果中，但商品化产品基本上全部以糖质基质经黑曲霉（Aspergillus niger）发酵生产。产品为无水或一水合白色结晶或粉末，易溶于水。
其用途广泛源于分子中含有三个羧基，pKa 值约为 3.1、4.8 和 6.4。它带来爽利纯正的酸味，消退迅速，不留尾味，也不掩盖果香，因此在多数饮料中优于苹果酸和酒石酸。同样这三个基团使其能在较宽的 pH 范围内有效缓冲，并使分子能够包合并固定金属离子。这种螯合能力本身即具价值：游离铁和铜会催化使油脂酸败、使切开水果褐变的氧化反应，而柠檬酸可将其从体系中除去。因此在实际应用中，一种原料即可同时发挥酸味剂、缓冲剂、防腐助剂和抗氧化增效剂的作用。
广泛用于软饮料和果汁、糖果、果酱和蜜饯、水果蔬菜罐头、乳制品、烘焙食品，并作为加工助剂用于整个食品工业。
