碳酸钾是碳酸的钾盐，分子式为 K2CO3，CAS 号 584-08-7，欧盟食品添加剂编号 E501(i)。产品为白色、强吸湿性颗粒状粉末，极易溶于水，水溶液呈明显碱性，pH 约为 11。
它既不是膨松剂，也不是防腐剂；采购它是为了其碱性，三种传统应用说明了原因。在可可加工中，用碳酸钾处理可可碎仁或可可液块，这一工序称为碱化处理（dutching），可中和可可的天然酸度，使色泽加深、尖锐的酸味变得柔和，并改善其在牛奶中的分散性。在亚洲面条生产中，它是碱水（kansui）的主要成分，这种碱性溶液通过改变面筋蛋白与黄酮类化合物的性状，赋予拉面黄色的色泽、筋道弹牙的口感和特有的香气。在水果干燥中，将葡萄浸入碳酸盐溶液可去除果皮表面的蜡质果霜，使水分更快逸出，葡萄干的干燥时间大幅缩短。它还可用作酸度调节剂和钾的来源。
